Although it felt like cheating I used a handheld blender with a food processor setting to mince all of my veggies for the chicken salad. It was awesome!
Also used my bday Cuisinart to slice the potatoes. Seriously, tech in the kitchen is great. Although cleanup is a bitch so make sure you have enough scale to make it worthwhile to bring out the plugged appliances.
